We recently had a chance to chat with Mayacama’s Spa Director, D’arcy Connich to gain some personal and professional insight.

Originally from: My dad was in the military so we moved a bit.  Born in San Diego, CA – then lived in Juneau, Alaska – moved to Oahu, HI and then ended up back in Northern California, where I grew up most of my life.

What do you find is the most compelling reason people choose to become part of Mayacama? 

First, the property is amazing.  I feel like I’m in Snow White’s enchanted forest!  It’s a breathtaking place to be.  Then, the service.  “No” is not part of our vocabulary.  We have every intention of meeting all the needs of our members.  The staff is amazing as well.  You can see we all like each other and work well together. I feel like that shines through our service.  We are a great team and we all support each other to make our members as happy as can be!

Outside of Mayacama what are 3 of your favorite spots (indoors or out) to unwind in Sonoma County? 

I enjoy the outdoors, so my favorite place is Dylan Beach.  I can take my 4 dogs there…everyone is so nice and dog friendly we can have them off leash and relax.  Next would be Armstrong Woods. It is such a beautiful place to hike and feel the energy of mother nature and I can take my dogs there, as well (leashed) but still have a good time.  3rd would be Hood Mountain. It’s the highest point between Sonoma and Napa Valleys at 2730 Feet. When you get to the top the view is incredible – makes you realize what an amazing place we live in.

What’s the most popular spa treatment at Mayacama?

Massage.  Deep Tissue or Swedish it is by far the most requested treatment we have.

What wellness trends you are seeing in 2016?

Meditation is turning into an everyday routine rather than something you do once in a while.  People are starting to realize how important  it is to stop and breath.

Aroma Therapy Massage.  People are starting to catch on to how much Essential Oils really help our bodies inside and out.  We are looking to bring in The Aroma Touch massage this summer.

Preventative care for our Skin.  Studies show Sunblock is not doing 100% of the job in protecting our skin from sun damage – leading to wrinkles, sagging aging skin and skin cancer.  We are all starting to learn better ways to keep our youthful skin and not need Botox and Fillers.  By adding an antioxidant to our skincare regime as well as using an SPF you will be 100% protected from sun damage – of course you will need to reapply the sunblock after an appropriate amount of time.

Teaching wellness to our children seems to be something trending.  I notice there is a lot out there for teaching our children to not let stress take over their lives as it may with their parents.  We seem to be concentrating on how bad stress treats our mind and body and it’s nice to see children’s yoga classes popping up and classes where we are actually teaching them how to deal with stress from a young age.  We may be creating a nice relaxed youthful society and I look forward to this!

What is your favorite Sonoma County place to grab a healthy bite?

To be honest, I rarely go out to eat…my husband (he also works at Mayacama in the Facilities Maintenance Dept) and I just bought our first house so we are just cooking up a storm at home and staying on a budget. BUT if I do have an opportunity to go out I will make sure I go to Jeffrey’s Hillside Café for a Mimosa and Huevos Rancheros!  It is the best I’ve had and quite a treat!

Costa Rica!! Or Australia, or Greece, or Italy, or Rome…I haven’t been many places other than Hawaii for vacation…YET!  I’d just be happy to go anywhere really!  I’m on board for any new experience!

Let’s face it. Everyone enjoys a friendly, familiar face. One of the reasons that members invest in Mayacama is because the staff is here to greet you time and time again. Over the years, relationships have been formed and friendships created between the Mayacama team, guests, neighbors and members. Each lifestyle section of our resort features consummate professionals in their industry that are happy to answer questions and lend a tip. We interviewed Daniel Hildebrand, Director of Residences at Mayacama, for a closer look at the residential side of the resort and what attracts buyers to invest in fractional and whole ownership at our resort:

What do you find is the most compelling reason people choose to become part of Mayacama?
I believe the most compelling reason members have become a part of Mayacama is the outstanding golf program that has been fostered into place by our Head Golf Professional, Ted Antonopoulos. From the physical course itself, to the locker room experience, the maintenance of the grounds, and the friendliness of the staff, it all comes together to make a lasting impression that our members get to relive again and again.

The 3 things that owners in the Residence Club are most surprised to discover at Mayacama are:
The Residence Club members enjoy the scope of demographic of Residence owners. From young families to retired couples, people of all ages and backgrounds have come to call Mayacama their home in wine country.

Members are pleasantly surprised by the abundance of activities offered through our Mayacama Kid’s Summer Camp. Petting zoos, Magic Camp, and Jr. Golf Boot Camp are just some of the programs offered by our team!

While people understand that California offers great weather, Residence Club Members have come to welcome the temperate climate all 12 months of the year. Never too hot, never too cold the Residence Club Members will find themselves enjoying a refreshing glass of white wine in the middle of August while also snuggled up with a sheep skin blanket in the middle of January. Anytime is a good time to reside at Mayacama.

3 favorite design features of Mayacama Residences:
I love that Residence Club Members have the option to utilize a One-Bedroom Casita or a Three-Bedroom Villa. While the Three Bedroom Villa is the perfect spot for hosting 3 couples, or housing the entire family – a One Bedroom Casita makes the perfect spot for an intimate weekend getaway.

The Harvest Room in our Three-Bedroom Residences is a living space that functions unlike any other room. With just 3 walls, this room offers an option to embrace the outdoor beauty of Sonoma County, while including the amenities of a traditional gathering space.

The beauty and intricacy of the Residences is something very special. Inspired by the Mediterranean/Tuscan architecture, the clay tile roofs, heavy stucco, archways, and authentic landscaping seemingly to transforms you into a true Italian Villa.

For families, I love Safari West! An authentic safari adventure, Safari West offers guests something they would never expect in the heart of “Wine Country.” With giraffes, buffalo, and zebras, the family will feel like they have had their own personal zoo brought to them in Sonoma County.

We have a great local dining scene, but everyone has their favorites. What is your favorite nearby restaurant?
With so many options to pick a favorite is impossible. Persimmon (Healdsburg) is a restaurant I just recently tried and I was blown away!

What dish do you recommend? Their Seven Spice brisket was something I did not expect to find on the menu. My favorite thing was Flat Iron steak with house made kimchee and fried rice.

Summer Nights on the Green in Windsor is always a great time! The live music, local food tents, and regional crafts are always entertaining for 3 – 4 months out of the Year!

Discover Wine Country’s Cheese Trail

What pairs better with wine than cheese? Sonoma Wine Country is also Cheese Country, with a number of artisanal, hand-crafted cheeses being produced throughout the region. If you have an interest in cheese making, there are a number of activities sure to please the most ardent cheese-lover.

Plan a small outing to experience the agricultural side of the region, take a trip along the Cheese Trail, a scenic adventure of pastures and oak-covered hills linking close to 30 farms and creameries. Each stop along the Cheese Trail is unique, with some facilities offering full tours, tastings as well as cheese-making classes for the adventurous. Experience the wide variety of cheese producing livestock, such as goats, cows, sheep and even water buffalo.

As the Cheese Trail covers a fairly vast geographic area, it is best to start with a travel plan based on the downloadable Cheese Trail Map. The map is a great reference, as it breaks down each farm by type of animal used in cheese making as well as by locations offering tour options for cheese making and general farm tours. It’s also a good idea to call ahead to make sure the farms are open to make the most of your outing. And yes, there is an app for that; be sure to download the Cheese Trail app available for your mobile devices.

Cheese 3.0
For those looking for a more hands-on approach to cheese making, reserve your spot at The Cheese Maker class offered by Achadinha Cheese Company, located in Petaluma. Here is a description of the class from their website:

The Cheese Maker class is offered for cheese lovers who really are looking for that once in a lifetime cheese making experience. As soon as the guests arrive they will roll up their sleeves and put on a beautiful hairnet to get their hands wet in the Vat full of curds and whey, while learning how we use the equipment. Then, they will see the cheeses aging in the aging rooms. Then to be treated to a full ranch tour that includes everything from the Milking parlor to the Loafing barn. Naturally there will be plenty of cheese tasting before lunch in our family party room.

Classes are $100 per person, with a 10 person minimum. Check for the monthly date of classes to plan your trip.

Meet Chef Scott Pikey

Scott Pikey, Executive Chef at Mayacama, is passionate about the farm to table experience.  Before joining Mayacama, the American Culinary Federation trained chef practiced and honed his art at such venues as the Old Warson Country Club in St. Louis, the Michelin-rated Sheen Falls Lodge, a Relais and Chateaux Hotel, in Kerry, Ireland, Larkspur Restaurant in Vail Colorado and in the kitchens of Auberge Resorts in Napa Valley and Bluffton, South Carolina.

A native of St. Louis, Pikey’s culinary endeavors are inspired by the bounty offered by Mother Nature in idyllic Wine Country.  Sourcing local and sustainable meats, fish and produce, the skilled chef enjoys exploring the region in search of a wide variety of fresh ingredients to prepare his dishes.

We recently had a chance to chat with Mayacama’s talented Executive Chef. Get to know Chef Scott Pikey a bit more:

When did you realize you wanted to become a Chef?

My early 20’s, I knew I did not want to wear a suit or be confined to an office. I needed to be challenged with a job that has action, with a lot of moving parts. Cooking was that answer…

Your menus are known for being approachable, local and responsibly sourced. Tell us a little bit about the unique bounty used at Mayacama:

I moved to Pacific Northwest to cook. I have always supported the small farms and would not be where I am today with out there hard work. The product that is available is amazing, which makes my job much easier.

The food I cooked is American, rooted in the traditions of France, Spain and Italy. Using classic cooking techniques and local sustainable product, the end result is technically crafted, honest and focused dishes.

At Mayacama, we are very lucky to have Miranda Forni as our Gardner. Her father, Peter, has run Forni Brown Gardens in Calistoga since the 80’s. When I was a young cook at Auberge these guys would deliver the most beautiful greens.

Today we sustain the restaurant with 90% of all green from our garden and are looking to expand to 1 acre by 2017.

What are your go-to ingredients in the MAYACAMA garden:

Autumn/ Winter: Cinderella Pumpkins, Red Vained Kale & Chard
Spring: Lemon Verbena, Strawberries, Sugar Snap Peas
Summer: Heirloom Tomatoes, Pole Beans, Nutmeg Melons & Hot Peppers

What inspires your menus and do you have a personal favorite Autumn dish?

The Seasons: Mother nature tells us what to cook. There is great dish I am really into that consists of Duck Fat Roasted Carrots, Cider Glazed Pork Belly, Warm Dates, Wheat Berries Granola and Huckleberry Jus.

There’s no better spot to share a romantic meal than Wine Country.  And certainly our location tops that list! John Ash & Co.
Nestled next to Vintners Inn, John Ash & Co. was the first Sonoma County restaurant to introduce the concept of cooking with seasonal, local foods and produce while pairing exceptional recipes with wines from the region. John Ash & Co. is a local favorite, known for its wonderful setting and excellent food. Book your reservations early as this popular restaurant fills up quickly.

La Gare
Enjoy fresh local ingredients and an extensive Sonoma County wine selection at La Gare in Santa Rosa’s Railroad Square, where for 30 years thousands of couples have shared their love of traditional French Cuisine in a quaint, dimly-lit, elegant and relaxed atmosphere.

Barndiva
Part restaurant, part cocktail lounge and part wine bar, Barndiva offers a hip and rustic Healdsburg setting coupled with some of the best food in the region. They also have an adjacent studio gallery with a variety of eclectic offerings you can peruse before your dinner. They are offering a prix fixe Valentine’s Eve menu which can be found here.

Willi’s Seafood and Raw Bar
If oysters and sparkling wine are your thing, just north of Mayacama in Healdsburg, Willi’s offers at least eight varieties of fresh oysters and tapas menus designed for sharing. The setting is vibrant, the seasonal cocktails are eclectic and the desserts are divine.

Santé Restaurant
Located in the historic Fairmont Sonoma Mission Inn, Santé Restaurant is a premier dining room known for its romantic setting and outstanding food. Recipient of the AAA Four Diamond Award and Michelin designations, Santé is amongst the top-rated restaurants in the region.  Again, a very popular dining spot so grab your reservation is there is space still available; you’ll be glad you did.

Depot Hotel Restaurant
The Depot Hotel Restaurant and Garden is located in a charming, historic stone building just two blocks from the Sonoma Plaza. Built in 1870, the Depot Hotel was originally the local hotel for 19th century passengers arriving by train from San Francisco. The original owners also opened an Italian restaurant and “saloon” here in 1890 to serve the townspeople of Sonoma and their visitors. The historic setting is now a popular hotel with great food and wonderful ambiance. Their Valentine’s Day menu looks amazing.

The Girl & the Fig
Located on the historic Sonoma Square, The Girl & the Fig is a favorite among locals and visitors alike. Offering a warm and cozy atmosphere creates a relaxed, yet intimacy, environment. This popular restaurant features a wonderful antique bar with French aperitifs, unique and traditional cocktails, an award-winning Rhone-Alone winelist, a seasonal menu, cheese & charcuterie platters and outdoor garden patio seating. You may have to book a table in an off-hour as this restaurant is in very high demand.

Central Market
Central Market is a farm-to-table restaurant, housed in the 1918 Maclay building in the heart of downtown Petaluma. Our cuisine is rustic California-Mediterranean. We make everything in house, from scratch daily. Our bread comes out of our wood-fired oven fresh each morning. We want your visit to Central Market to feel like a visit to an old friend’s house, where you are welcomed warmly. We invite you to enjoy a fresh, local delicious meal, paired with a bottle from our carefully curated wine list, which features local and international selections.

Twisted 2
For those looking for a small, quaint setting with amazing food, look no further than Twisted 2 in Petaluma.   Twisted 2 is a labor of love for owners, Dick and Julie – a final realization of the couple’s passion for creating a dining experience that is memorable and honest. The Duck Club Restaurant

It’s Olive Season in Wine Country

Although Wine County is best known for its grapes, it is also home to a variety of other crops. Olives are popular in the region and the season to harvest this bountiful fruit takes place during winter. From artisanal oils to side dishes that complement a harvest feast, cuisine using the finest oils find their way to tables throughout the region and beyond. It’s olive season in Sonoma County, so get out and enjoy the bounty of winter in Wine Country.

The largest celebration is the Sonoma Valley Olive Festival, which runs through January and February across Sonoma Valley. Enjoy such events as the Olive Odyssey, Olive Blessings, Martini Madness, Curing Workshops and more! The highlight of the festival is the Annual Feast of the Olive Dinner on January 30th at Sonoma’s Ramekins Culinary School, which will include 19 chefs, 5 courses, 3 menus, resulting in one fantastic feast. McEvoy Ranch
When you think of olives images of the picturesque McEvoy Ranch come to mind. Sitting on 550 acres in the rolling hills of west Marin County, McEvoy Ranch was once a dairy farm and now boasts 80 acres of organic olive trees making it one of the nation’s largest producers of certified-organic, estate-grown olive oil. You can visit by-appointment for group tastings and wine pairings or enjoy specialty farm tours to watch the pressing and learn about the process;  they even have milling days, which include a community milling day where you BYOO (bring your own olives). Benziger Family Winery
Benziger’s Olive Orchards comprise a large portion of their vast wine estate and contribute to the overall health of the entire property. The olive orchards coexist with a number of other plantings, such as wine, garden and other forms of agriculture in order to retain a balance of this productive land. The Olive Press
The Olive Press was the very first olive mill in Sonoma, California and is now known as the most highly awarded olive oil producer in the nation. They are committed to producing the highest quality of olive oil along with an array of handmade artisanal products while serving the pressing needs of the local community. Figone’s California Olive Oil Co.
Although their olive orchards are located outside of Sonoma, the fruit is milled, blended and bottled on-site at a Sonoma Valley industrial mill. The Figone family has been in the olive business for over a century, having pioneered such techniques as “diversified farming” in the United States. Diversified farming is the inter-planting of rows of olive trees with rows of grapes. They offer year-round tasting as well as milling for local growers.
